According to Tolbyn's Spirit Guide, the only known ghostly composer was a man once known as Manfred von Friedbach.

Friedbach was a 17th century composer who was never satisfied with his own work. He wrote many symphonies, but never completed a single one. To this day he may be heard intermittently in various musical venues, cursed to forever strive to finish a composition.

From that, we can clearly determine that ghosts compose music in the booroque style.

Stephen, if the pun of answer you come up with stinks worse than a zombie's b.o., then your answer is probably correct.
